Roast Loin of Pork

INGREDIENTS:

  • 2 Lb. pork loin, center cut
  • kosher salt, to taste
  • black pepper, to taste
  • 3 oz. butter
  • 1 T sage, chopped
  • 2 Cups brown stock

 DIRECTIONS:

  1. Season pork loin with salt and pepper.
  2. Brown pork on all sides in a roasting pan or large saute pan.
  3. Roast in a preheated oven at 400 degrees F. Roast for 40 minutes
  4. Baste pork loin with its own juices during process.
  5. Remove from oven to rest before slicing.
  6. Skim fat from juice and simmer with sage and stock until sauce is nappe.
  7. Slice pork loin and serve with sage sauce.
