INGREDIENTS:
- 2 Lb. pork loin, center cut
- kosher salt, to taste
- black pepper, to taste
- 3 oz. butter
- 1 T sage, chopped
- 2 Cups brown stock
DIRECTIONS:
- Season pork loin with salt and pepper.
- Brown pork on all sides in a roasting pan or large saute pan.
- Roast in a preheated oven at 400 degrees F. Roast for 40 minutes
- Baste pork loin with its own juices during process.
- Remove from oven to rest before slicing.
- Skim fat from juice and simmer with sage and stock until sauce is nappe.
- Slice pork loin and serve with sage sauce.
