Lemon Spinach Chickpea Tacos with Feta

Ingredients

  • 1 can chickpeas, drained
  • 10 oz washed baby spinach
  • 1/4 cup extra virgin olive oil
  • 1 tsp coarse salt
  • Juice of 1 lemon
  • Feta cheese
  • Tortillas

Directions

  1. On medium, heat large skillet with oil. Add chickpeas and cook for 2 minutes.
  2. Add spinach in bunches until just wilted.
  3. Turn off heat and add lemon juice and salt.
  4. Heat tortillas as you like

Serve immediately with tortillas and feta.
