Grilled Broccoli with Lemon and Parmesan

Ingredients

  • 2 lbs broccoli, 6 to 7 inches in length
  • 1/4 cups extra virgin olive oil
  • 1 tbsp of water
  • 3/4 salt
  • 1/2 cracked black pepper
  • 1 lemon
  • 2 24"x12" sheets of aluminum foil
  • 1/4 cup shredded parmesan cheese

Directions

  1. Preheat grill for 15 minutes on high
  2. Cut broccoli in half lengthwise. Use peeler to remove tough outer part of steps
  3. Whisk together EVOO, water, salt and pepper
  4. Cut lemon in half side to side
  5. Place broccoli in alternating row with cut side down and seal foil into pouch.
  6. Grill broccoli packs for 8 minutes on med-high. Flip 1/2 way through.
  7. Slit foil to vent. Put broccoli and lemon (cut side down) grill  for 8 min turning broccoli every 2 minutes.
  8. Cut broccoli into 2 inch pieces and transfer broccoli to bowl. 
  9. Squeeze lemons over broccoli. Dizzle with EVOO and season with salt and pepper. Top with parmesan cheese.
